In traditional English cuisine, pudding is one of the most mysterious dishes. An attempt to comprehensively and unambiguously characterize this dish baffles the culinary experts. Puddings are meat, bread, with vegetables, with a wide variety of cereals, and blood pudding is also called "black pudding". But nevertheless, sweet puddings are famous all over the world and enjoy unchanging popularity for more than a century. And even in England the word "pudding" is synonymous with dessert.

Instructions

Step 1

Chocolate pudding with cocoa Mix cocoa and breadcrumbs, top with cream, soak for 10 minutes, add milk if necessary. Mix butter and sugar, mash, beat in the yolk, add flour through a sieve, then soda, almonds and soaked cakes with cocoa, pour in cognac. Whisk the whites and sugar in a separate bowl into a strong foam, add to the dough, stir, put in a water bath and cook for 1 hour. Serve hot, drizzled with vanilla sauce.

Step 2

Chocolate Pudding Break the chocolate into small pieces and melt in a water bath, add butter, stir until smooth. Separate the egg whites from the yolks, beat the whites into a strong foam, separately beat the yolks with sugar to thicken and brighten, add the whipped whites and chocolate with butter to the yolks, add flour through a sieve.

Step 3

Divide the dough into quarters, arrange in tins, cover each with baking parchment paper and place in a water bath or double boiler, cook for 30 minutes. Remove the puddings from the molds, place them on a serving plate, top with low-fat cream and garnish with berries or fruit.

Step 4

Chocolate pudding in a towel Mix light and dark raisins, cover with cognac and rum, leave at room temperature to soften the raisins. Chop the kidney fat, cut the lemon in half, squeeze the juice out of one and remove the zest from it with a grater, peel and chop the apples, grate the chocolate on a fine grater. Sift flour into a bowl, add chocolate, fat, zest, crackers, sugar, salt, candied fruit, nutmeg, apples and softened raisins to it.

Step 5

Beat the eggs, add the lemon juice, and continue beating as you slowly pour in the beer. Add the beaten mass to the flour in small portions, stirring carefully in each portion. Grease the pudding tin with oil, transfer the dough there, cover with parchment paper, wrap the pan in a towel.

Step 6

Place the pan in a pot of water, place the oppression on top, close the lid, bring the water to a boil and cook for about six hours, making sure that the water level and temperature remain the same.
