For 6 servings of roast beef you will need: - 2 kg of beef tenderloin; - 2 tbsp. vegetable oil (preferably olive oil); - 2 tsp salt; - 2 tsp ground black pepper; For garnish: - 16 medium-sized potatoes; - 4 small heads of garlic; - 300 g green beans; - a sprig of rosemary; - 2 tbsp. olive oil; - 2 tsp salt

Instructions

Step 1

Rinse the beef thoroughly, rub it well with salt and wrap the string tightly around the meat. Wrap the meat in baking paper, then remove for two to three hours to marinate in the refrigerator. Cut the potatoes into even halves. Combine the grated garlic, rosemary and vegetable oil in a separate bowl. Pour the resulting hot sauce over the potatoes.

Rub the meat with the pepper and olive oil mixture. Place the meat on the parchment, then onto a baking sheet. Put chopped potatoes and three heads of garlic there. Place the baking sheet in an oven preheated to 220oC for half an hour.

Step 2

Remove the beef from the oven and cut into thin slices. Boil the beans for four to five minutes, then discard them in a colander.

Place the slices of meat, potatoes, and beans on a serving platter. Serve with baked garlic.
