Step 1

For cooking pork with beans, it is better to use the flesh cut from the shoulder blade or neck. It is from her that delicious stews are obtained. But any pork pulp will do. The main thing is that it is non-greasy. Wash the meat thoroughly, cut into medium-sized pieces weighing 20-30 g.

Prepare your vegetables. Sort red beans and soak for two hours in a container of cold water. Then rinse, pour 1 liter of cold water and boil until tender. Peel and chop onions and washed carrots: onions - in half rings, carrots - in thin strips. Wash the tomatoes and cut into thin slices.

Salt the sliced meat and sprinkle with spices to taste. Black pepper, shredded nutmeg, dried rosemary or thyme are good choices for this dish. Melt the bacon in a deep frying pan and fry the pork pieces in it until golden brown. Gradually add the prepared vegetables: first onions, then carrots and tomatoes. Cook for fifteen minutes, stirring occasionally.

Rinse dried apricots, prunes and dried figs well. Cut large figs in half. Transfer the pork, onions and tomatoes to a saucepan or saucepan, pour two glasses of hot boiled water, add the prepared dried fruits. Let the dish boil, then reduce the heat and simmer for 20-25 minutes.
