Step 1

If you prefer vegetable dishes, make a pumpkin, carrot, onion, and bell pepper stew. To do this, peel the pumpkin and cut into small pieces.

Step 2

Heat some sunflower oil in a frying pan and fry the onions and carrots in it until golden brown. Then add the red bell pepper and pumpkin, cut into half rings. Simmer vegetables over medium heat for 5 minutes, season with salt and pepper to taste.

Turn the oven to 180 degrees. Grease a baking dish with butter and add the vegetable mixture. Place the pumpkin ragout in the oven for 20-25 minutes, then remove and cool slightly before serving. This dish will be the perfect side dish for beef, pork, poultry and even plain rice.

Make a pumpkin stew with poultry slices. This option is suitable for those who want to immediately get an independent and dietary meal.

Cut the chicken into small cubes and fry over high heat in olive oil with a little curry or turmeric for a few minutes. Then add to it the pumpkin and carrots, cut into small cubes, and fry the whole mass for 5 minutes.

Prepare the sauce by mixing freshly squeezed juice of 1 orange, olive oil and chicken stock in a hotel bowl. Then add this sauce to the pan with the chicken and pumpkin, then simmer the stew for another 10 minutes, pre-salt and pepper it to taste. And if you instead put the stew in the oven for 10 minutes, pouring it with sauce, the dish will turn out to be even tastier.

After taking the pumpkin ragout out of the oven, add the finely chopped orange slices to it. Then place on a plate and garnish with a few sprigs of parsley.
