A light, moderately sweet apple cake will be a pleasant surprise for your guests and family members. The recipe is quite simple, but the cooking process will take some time. The peculiarity of making a cake is that it does not need to be baked.

- For the cake:
- 60g vanilla breadcrumbs
- 20g almonds
- 50g butter
- 2 tablespoons sugar
- For the cream:
- 3 tsp gelatin
- 65 ml. water
- 1 lemon
- 250g mascarpone
- 60g sugar
- 1 tablespoon vanilla sugar
- 2 tablespoons apple juice
- 150g cream
- For apple jelly:
- 2 apples-190g
- 180 ml. apple juice
- 3 tablespoons lemon juice
- 3 tsp gelatin
- 65 ml. water
Instructions
Step 1
Lightly fry the almonds in a skillet.
Step 2
Grind almonds and crackers in a blender.
Step 3
Add butter and sugar and mix.
Step 4
Put the mixture in a mold and refrigerate to set.
Step 5
To prepare the cream, soak the gelatin in cold water for 10-12 minutes.
Step 6
Grate the lemon zest on a fine grater and squeeze the juice out of the lemon.
Step 7
Combine the mascarpone, sugar, zest and lemon juice.
Step 8
Heat the apple juice along with the gelatin.
Step 9
When the gelatin dissolves, remove from heat and, adding in small portions, stir in the mascarpone cream into the juice.
Step 10
Whisk in the cream and combine gently with the cream.
Step 11
Put the cream on the cake, cover with cling film and place in the refrigerator for 1, 5-2 hours.
Step 12
While the cream is solidifying, prepare the apple jelly.
Step 13
Soak gelatin in cold water for 10-12 minutes.
Step 14
Rinse the apples, peel and grate on a coarse grater and sprinkle with lemon juice.
Step 15
Heat the apple juice, add the grated apples to it.

Simmer the apples for 2-3 minutes and add the gelatin.
Step 17
Heat until the gelatin is completely dissolved.
Step 18
Refrigerate the mixture at room temperature.

Pour the chilled jelly over the cream and refrigerate for 2 hours.
