Fricassee is a dish that came to us from France. Literally translated, it means "mixture". Fricassee is a mixture made from meat and vegetables, which are first fried and then stewed in a sauce or in their own juice. Fricassee was popular in the countryside, common among the poor townspeople, and later became a dish of the nobility.
Chicken fricassee with mushrooms
Cooking this dish does not require special knowledge or skills; even a novice cook can handle it.
You can cook a dish using almost any vegetables: carrots, potatoes, zucchini, peas, beans, and so on. You can also use any seasonings that are combined with meat.
How to cook chicken fricassee with mushrooms
A dish prepared according to this recipe, which is considered a classic, turns out to have an unusual exquisite taste, and the meat just melts in your mouth.
For cooking you will need:
- chicken fillet - 0.5 kg;
- fresh champignons - 300 g;
- cream - 200 ml;
- eggs - 2 pcs;
- flour 1 - 2 tbsp. l.;
- lemon juice;
- spices and seasonings to taste;
- butter 1/2 tsp.
Remove skins and excess fat from chicken meat, then cut it into small pieces.
Pour vegetable oil into a deep frying pan and bring it to a boil, then pour the chopped chicken into the pan and fry over high heat until the pieces of meat turn white.
While the meat is fried, rinse the mushrooms, cut into small slices, sprinkle with lemon juice, add to the meat in a frying pan and fry first over high and then over moderate heat.
When the liquid evaporates from the mushrooms, add salt and spices to the pan, mix everything carefully, add a glass of water and 100 milliliters of cream, mix again, cover with a lid and leave to simmer for 5-10 minutes over low heat.
At the egg, carefully separate the yolks from the whites, mix the yolks with the remaining cream (the mixture should be homogeneous) and pour the sauce into the fricasse being prepared, then leave it to simmer for another 3 - 5 minutes.
Chicken fricassee with beans
The usefulness of this dish lies in the fact that it contains almost all vitamins and trace elements, it is prepared for a little over half an hour and can be served as a hot dish or as an additional snack.
For cooking you will need:
- chicken fillet - 0.5 kg;
- onion - 1 pc;
- sour cream 30% - one small can;
- fresh or frozen mushrooms - 200 g;
- soy sauce - 2 tbsp. l.;
- green beans - 150 - 200 g;
- sunflower oil;
- salt and seasonings to taste.
Wash the chicken fillet and cut into small pieces. Heat the oil in a frying pan, put the chicken in it and fry over low heat for 20 minutes, add seasonings.
Chop the onion and mushrooms, add the pan to the meat and simmer for another 2-3 minutes. The frozen mushrooms must first be melted.
Chop the frozen asparagus if necessary and put it on top of the mixture in a frying pan, add salt to taste.
Pour soy sauce over the dish, stir, cover and simmer for 5-7 minutes over low heat. To stew the dish, and not fry, add a little water.
At the end of cooking, add sour cream, if you wish, then chopped garlic, mix, bring to a boil and turn off the stove. Chicken fricassee with mushrooms and beans is ready.
Useful tips for cooking fricassee:
- champignons or oyster mushrooms are considered traditional mushrooms, but honey mushrooms, milk mushrooms, boletus or butter mushrooms can be used, only the cooking time is slightly increased;
- all frozen or canned foods are fried or stewed, otherwise they will spoil the dishes;
- fricassee is prepared from chicken breast, but you can use any parts of the poultry, the main thing is to first remove the skin, bones and excess fat.
