Smoked Salmon Summer Salad is very nutritious and easy to prepare, while summer greens give it a refreshing flavor. This delicious dish can easily replace a whole meal.

- - young potatoes 800 g
- - hot smoked salmon 400 g
- - natural yogurt 200 ml
- - fennel greens
- - fresh basil
- - half a cucumber
- - juice and zest of 1 lemon
- - olive oil
- - sea salt, ground black pepper
Instructions
Step 1
For the salad, you need small young potatoes. Thoroughly wash and peel potatoes of approximately the same size. It is advisable not to cut the peel, but to scrape it off. Take a saucepan, pour cold water over it, add some salt to the water, put on fire, bring to a boil. Dip peeled potatoes into boiling water, bring to a boil again and cook for 15 minutes until tender.
Step 2
Prepare the dressing while the potatoes are boiling. To do this, mix yogurt with lemon zest and lemon juice, add a large pinch of salt and olive oil to it. Lightly pepper the dressing.
Step 3
After 15 minutes of cooking, drain the water from the finished potatoes. The potatoes are transferred to a bowl, immediately salted and seasoned with pepper, then sprinkled with a little olive oil. 5 minutes later, half of the dressing is added to the potatoes. Leave the potatoes to cool. It is very important to season the potatoes while they are still hot so that they can absorb all the flavor.
Step 4
Wash the cucumber well, dry it with a napkin, peel it off. Cut the peeled cucumber in half lengthwise and remove the seeds. The cucumber is cut into small pieces about half a centimeter thick. Wash the fennel, dry and chop coarsely. Cucumber, basil and fennel are added to the potatoes, and everything is gently mixed.
Step 5
The salad is laid out on portioned plates, pieces of salmon are added to it. Sprinkle with olive oil again.
