Caesar salad got its name in honor of its creator. No, of course, it was not Guy Julius Caesar who invented it, but his tesca Cardini Caesar. It was he who, on the holiday of American Independence Day, fearing that a visitor to his little restaurant would not have enough snacks, decided to make a salad from those products that were at hand. As a result, the very "Caesar", which is now popular all over the world, was born.

    • Lemon - half
    • Eggs - 2 pcs.
    • Parmesan cheese (grated) - 1-2 tablespoons
    • Olive oil - 100 g
    • Sweet mustard - 20 g or Worcestershire sauce - a couple of drops.

Step 1

Caesar salad is dressed with a sauce of the same name. This dressing is easy enough to prepare. The method of its preparation is very similar to the method of making mayonnaise.

Boil water in any small saucepan. Remove the pan from heat and place two raw chicken eggs in the water. After 3 minutes, take them out and cool.

Step 2

While the eggs are cooling, squeeze the juice of half a lemon into a separate bowl.

Place the contents of the eggs, both the liquid part and the resulting thin layer of boiled protein, in a blender glass and beat well. After that, add lemon juice to the eggs and beat again.

Step 4

Finely grate Parmesan cheese and add 1-2 tablespoons of this cheese to the egg and lemon mixture. Beat everything thoroughly again.

Step 5

After that, add a couple of drops of Worcester sauce or 20 g of sweet mustard (also called sandwich or French mustard) to the resulting mixture. And, whisking this mixture, start adding olive oil in a thin stream (literally drop by drop). If you add oil quickly, it may not mix with the rest of the mixture, but float to the top of the sauce. It is necessary to whip the sauce for such an amount of time that its volume increases by 1.5 times.
