Preparation of ingredients

If you have some fish and meat fillets, not enough for cutlets, combine these two products and create a dish called "Friendship". Here's what you need for it:

- 250 g pork with fat;

- 1 onion;

- 1 medium-sized raw potato;

- 1 raw egg;

- pepper, salt to taste;

- vegetable oil;

- bread crumbs.

It's great if your refrigerator contains fillets of pink salmon, pollock, hoki or other types of lean fish, and pork with fat, then meat and fish cutlets will turn out to be noble. It is important that the carcass of the fish consists of dense pulp, otherwise the meatballs may spread.

Rinse the pork, cut into cubes. If you have a non-electric meat grinder or problematic meat (with a small amount of veins, films), place the chopped pieces in a bowl in the refrigerator for 30 minutes. They will freeze a little, then it will be easier to twist them.

Butchering fish

Wash the fish, remove excess moisture by lightly squeezing the fillet. If you have a whole carcass, clean the scales. To prevent it from scattering in all directions, place the fish in a transparent bag and remove the scales with a knife. After that, make a cut on the abdomen with scissors, remove the insides, rinse this part of the carcass.

Remove fish bones. To do this, carefully make a cut along the ridge with a sharp knife, first move one half of the backrest away from it, then the second. Take out the ridge along with the large rib bones. If there are small bones, cut two halves of the resulting fillet into pieces, remove them by hand.

Shaping, frying

Wash onions and potatoes, peel, cut into cubes. Grind the fish and pork in a meat grinder, and then the prepared vegetables. Beat in an egg, add pepper and salt to taste, mix well, beat it off. To do this, the minced meat is raised over a wide container and thrown into it. Do this at least twenty times.

Pour flour or breadcrumbs into a bowl. Before forming the next cutlet, moisten your hands in water, then the minced meat will not stick to them. Dip in breading, fry in sunflower oil on both sides until a delicious golden brown crust.

During frying of the first portion of cutlets, the rest of the minced meat can let in water, it must be drained so that the products are strong and do not spread. You can put a bowl of minced meat in the freezer for this time, then the twisted ingredients will not let the juice flow.

Meat and fish cakes are delicious not only with pasta, mashed potatoes, but also with many types of cereals. You can serve them with rice, buckwheat or barley porridge. Pickled cucumber or sauerkraut will also come in handy with this dish.
