Nutritionists are advised to give up sweet, flour and fried foods. But the rules are there to be broken sometimes. Indulge in delicious homemade cottage cheese donuts.

- - 500 g of cottage cheese;
- - 2 - 3 glasses of flour;
- - 500 ml of milk;
- - 15 g of fresh yeast or 5 g of dry yeast;
- - 2 - 3 eggs;
- - 50 - 70 g of crushed nuts;
- - 1 tbsp. a spoonful of butter;
- - 2 tbsp. tablespoons of sugar;
- - 1 tsp vanillin;
- - 0.5 teaspoons of baking soda;
- - 0.5 teaspoons of salt;
- - 2 glasses of sunflower oil (for frying);
- - 1 glass of powdered sugar;
- - 250 g sour cream.
Instructions
Step 1
Sift the flour into a deep bowl. If live yeast is used to prepare the dough, it must be left in a warm place for about an hour so that it reaches room temperature. Stir in the yeast and slightly melted butter. Knead the dough with your hands until it forms an oily crumb without large lumps.
Step 2
Warm milk to room temperature. Pour the cottage cheese over with warm milk and stir until the mixture becomes smooth. Opt for low-fat, low-fat cottage cheese for your donuts. Pour the curd mass into the flour, stir and leave for half an hour in a warm place.
Step 3
Separate the yolks from the whites. Add a little salt or lemon juice to the whites and refrigerate for better whipping. Add yolks, sugar, crushed nuts, salt and vanillin to the dough. Knead the dough thoroughly until air bubbles appear.
Step 4
Beat the egg whites with a mixer for at least 7 minutes. You should get a strong, thick foam. Add the beaten egg whites to the dough and stir gently. The dough should be kneaded easily enough.
Step 5
Place the dough again in a warm, dark place for about half an hour. The finished dough is at least doubled in size. The dough should be quite steep, smooth, and should not stick to your hands. It is very similar to bread dough.
Step 6
Sprinkle flour on the board or table. Roll out the dough into a layer about 1 - 2 cm thick. Cut out small round cakes with a glass or a special mold. Place the donuts in a warm place for another 30 minutes.
Step 7
Heat the sunflower oil in a deep skillet or saucepan for about 10 minutes. Fry the donuts in hot oil for 45 seconds on each side. Add oil to the pan constantly. There should be enough of it so that the donuts are completely covered with oil. Before serving, sprinkle with powdered sugar and sour cream on ready-made curd donuts.
