    • 8 eggs;
    • 1 yellow and 1 orange pepper;
    • 1 red onion;
    • 10 young shoots of green asparagus;
    • 15 pitted olives;
    • olive oil;
    • oregano
    • thyme
    • salt
    • pepper to taste.

Step 1

Prepare your green asparagus: Cut off the tough ends and be sure to rinse the stems with cold water. Place the asparagus in a double boiler and cook for five minutes. If you don't have a steamer, place the stems in a metal colander and place over a saucepan of boiling water.

Step 2

Cook the asparagus until soft. Then rinse it with cold running water and place it in a colander or paper towels to let the liquid drain.

Step 3

While the asparagus stalks are cooking, cut the onion and bell pepper into half rings. Fry them in a preheated pan with vegetable oil (preferably olive oil). Place cooked onions and peppers on a plate.

Whisk four eggs lightly, add finely chopped thyme, salt, pepper and stir. Pour the beaten eggs into a skillet with preheated olive oil and sauté the omelet.

Place the finished omelet on a platter. Cut the olives into slices. Put the fried onions and peppers, and the slices of olives on the omelet.
