It is necessary
- - 300 g salmon fillet;
- - 2 egg yolks;
- - 50 g butter;
- - 5 g sour cream;
- - 2 tbsp. wine vinegar;
- - 1 onion.
Instructions
Step 1
Peel and wash the onion. Chop it finely and simmer in a pan in vinegar. When all the moisture has evaporated, the onion is ready. Melt butter in the microwave and add sour cream to it.
Step 2
Beat the yolks with a mixer and add 1 tablespoon of water. Place on the hotplate and bring the mixture to a foam. You do not need to bring it to a boil, therefore, as soon as foam has formed, remove from heat.
Step 3
Put the mixture in a water bath and slowly pour in the butter and sour cream. Mix everything with a spoon and leave for another 5 minutes.
Step 4
Cut the salmon fillets into large cubes and fry in a pan until cooked through. Stir the meat gently to avoid burning either side.
