    • 4 cloves of garlic;

    • 30 g butter;
    • 150 g hard cheese (gouda

    • baking sheet oil (vegetable or butter);
    • olive oil to lubricate the surface of the dough.

Instructions

Step 1

Make pizza dough. Sift the flour. Stir the yeast in a little water, dissolve salt and sugar in the remaining water. The recipe contains the average amount of water, it can vary depending on the type and moisture content of the flour. Mix all the ingredients for the dough and knead for at least 15 minutes. The mass should become smooth and homogeneous, feel soft and "alive" to the touch. Leave to ferment for 1, 5-2 hours, covering the dishes with the dough with cling film from airing.

In the meantime, prepare the filling. Rub the cottage cheese in a kitchen processor until a paste is added, adding eggs. Cut the onions into small cubes and salve in butter. Finely chop greens, garlic. Combine everything with cottage cheese, salt to taste, stir. Grate the cheese.

Knead the fermented dough for 3-4 minutes, divide into two parts. Form each piece into a ball, cover with cling film and rest for 5-7 minutes. Then stretch the dough with your hands so that you get a 5-7 mm thick flat cake out of each ball. Do this gradually, twisting the piece on the table and slowly pulling the edges. If the dough resists, let it rest for 5 minutes, then continue the process again.

Place the workpieces on oiled baking sheets. Brush the surface of the dough also with olive oil. Spread the curd filling on top with an even layer. Sprinkle the grated cheese over the pizza and let stand for 15 minutes.

Step 5

Place the pizza in an oven preheated to 250 ° C and bake for 15-20 minutes. Reduce the temperature to 180 ° C five minutes after starting baking. Cool the finished pizza slightly to allow the top layer of cheese to set. Cut into portions and serve.
