Making homemade black bread

You will need sourdough to make this bread. Despite the fact that yeast is added directly to the dough, it is used anyway, mainly for flavor.

For starter culture, you need the following:

- 370 g of coarse rye flour;

- 370 g of purified water;

- 20 g of yeast.

Other ingredients for making homemade black bread include:

- 283 g of rye grains (additionally 283 g of water for them);

- 243 g of coarse rye flour;

- 30 g of water;

- 17 g of salt;

- 56 g of sunflower seeds;

- 6 g of instant yeast.

Make a starter with the listed ingredients and let it sit at room temperature overnight. Remember to use chlorine-free water to make bread at home.

Combine rye grains and water in a separate bowl. If you purchased whole beans, place them in a blender or coffee grinder and grind for 30 seconds. During this period of time, they will not be crushed into flour, but simply crushed into pieces. Leave the grains in water at room temperature for 16-18 hours.

After the indicated time, mix the starter with the rest of the dough ingredients and mix thoroughly. Add all other ingredients, including sunflower seeds and soaked rye grains, and knead for about 10 minutes. Then leave it indoors for 10 minutes, then flatten it again (it will change shape due to yeast growth).

Form a loaf and place in a well-oiled and floured baking dish. Brown bread dough is very sticky, so flour thoroughly all surfaces that come into contact with it, as well as your hands.

Cover the baked loaf with a layer of flour, cover with plastic wrap and let the bread rise for an hour in a warm place. It may seem strange, but the bread will grow slightly at this stage.

How to bake bread

Preheat oven to 250 degrees. Place the dough pan on the middle rack of the oven. Place a baking sheet filled with water on the bottom. Bake homemade black bread over steam for 15 minutes, then remove the pan of water and bake in a dry oven for about 45 minutes to an hour. Then carefully remove the bread from the pan and place it back in the oven for 15 minutes to create a crispy crust.

For a richer taste of the cooked bread, wrap it in a cloth and leave it at room temperature for 24 hours. Cut the cooled loaf into pieces no thicker than one centimeter. Alternatively, you can cut it into pieces, wrap it in foil, and freeze it. After freezing, homemade black bread just needs to be reheated in the microwave to give it the taste of just baked bread.
