- Cauliflower - 1 medium head
- Flour - 1, 5 tablespoons
- Butter - 4 tablespoons
- Chicken or meat broth - 2.5 cups
- Onions - 1 medium-sized head
- Cream - 2/3 cup
- Chicken egg - 2 pieces
- Cheese to taste
- Nutmeg - to taste
- Green onions to taste
- Salt and pepper to taste
Instructions
Step 1
Rinse the head of cabbage well in cold water and dry. Divide it into small inflorescences and cook in salted water for 5-7 minutes.
Step 2
While the cabbage is boiling, melt the butter in a hot pan, add flour to it. Keep on low heat for 2-3 minutes.
Step 3
Onions need to be peeled and finely chopped. Prepare flour heated with butter.
Step 4
Add onions and flour heated with butter to chicken or meat broth. Boil. After boiling, cook over low heat for 20-25 minutes.
Step 5
Cool the broth. Add cauliflower to the cooled broth. Stir the soup thoroughly. Then rub through a sieve and bring to a boil.
Step 6
Grate a little of any hard cheese on a fine grater. Beat the cream with egg yolks. Add grated cheese to the cream and yolks. Dilute the mixture with one glass of broth, then pour it into a pot of soup. Heat without boiling.
Step 7
A few minutes until ready, add salt, pepper, green onions, nutmeg to taste.
