Curd eclairs are quite simple to prepare. The base can be prepared in advance and the filling can be prepared before serving. Such a treat will greatly delight the guests.

It is necessary

  • - baking sheet;
  • - parchment;
  • For the test:
  • - butter 50 g;
  • - water 100 ml;
  • - flour 60 g;
  • - cocoa 3 tbsp. spoons;
  • - salt 1 pinch;
  • - sugar 1 tbsp. the spoon;
  • - chicken egg 2 pcs.;
  • For filling:
  • - fat-free cottage cheese 200 g;
  • - condensed milk 4-5 tbsp. spoons;
  • For decoration:
  • - icing sugar;
  • - mint.

Instructions

Step 1

Sift flour with cocoa and stir until smooth. Cut the butter into slices, put them in a small saucepan, add water, sugar and salt. Bring the mixture to a boil, add the flour and stir the mixture continuously with a wooden spatula until a lump of dough forms. Then remove from heat and cool.

Step 2

Beat one egg with a fork. When the dough has cooled, gently insert the egg into it and mix thoroughly. Then beat the second egg and add to the dough in the same way. It should not turn out liquid, but not thick either.

Step 3

Cover the baking sheet with parchment. Using a cooking syringe, place the dough in bumps no more than 4 cm in diameter on a baking sheet. Bake the first 10 minutes at 220 degrees, then lower the temperature to 180 degrees and bake for another 20 minutes. Leave the eclairs in the oven until they cool completely.

Step 4

For the filling, rub the curd through a sieve and mix with condensed milk. Fill the cooled eclairs with the filling using a cooking syringe. Serve with mint sprigs and powdered sugar.
