Sift flour, rub finely cheese. Mix flour with cheese, add cold butter, rub with your hands - you should get a homogeneous oily crumb.

Knead the mass, gradually adding 1 tbsp to it. a spoonful of salted water. Remove the resulting dough for 1 hour to cool in the refrigerator.

Put the oven to heat up to 200 degrees. Prepare a baking sheet. Take the dough out of the refrigerator, roll it out to a very thin layer, cut it into small diamonds with a curly knife.

Transfer the cheese crackers to a dry, clean baking sheet, put in the oven, remove after about 10 minutes, cool. Transfer the crackers to a bowl and serve immediately warm.
