Step 1

First of all, let's decide on the quality of the products from which homemade puff pastry will be prepared. We take wheat flour of the highest grade for general use. Let's take the highest quality butter, 82.5%. Do not take margarine or a spread, as, having gained in price, you risk significantly losing in taste.

Step 2

First you need to prepare the base for the puff pastry. This is the most common unleavened dough made from flour and water. Add three quarters of a teaspoon of salt to the dough. Combine flour, salt and water, knead soft dough. It should be left in a warm place for 15 to 30 minutes to make the dough more elastic.

Step 3

Remove the oil from the refrigerator so that it softens a little at room temperature.

Divide the prepared dough into walnut-sized pieces. Roll each piece into a cake, not too thin and wide, put a thin slice of butter in the middle and fold the cake into a square envelope. This envelope should be immediately placed in the refrigerator or freezer. And start forming the next one.

Step 4

Now take the envelopes out of the refrigerator or freezer one at a time, roll out the cake again according to the following scheme: roll it out and turn it 90 degrees and roll it out again, turn it again 90 degrees and roll it out. Put a small thin piece of butter in the middle again and fold back into a square envelope. Put in the refrigerator.

When all the envelopes are ready, again take out one at a time from the refrigerator, roll out the cake, which immediately roll up into a rectangle, roll out the rectangle a little, sprinkle with pepper. Take the dough by the ends and turn it several times in opposite directions to form a spiral. Connect the ends, put the resulting rings on a baking sheet.
