In order to cook pasta cake, you will need: 110 g of almond flour, 220 g of powdered sugar, 3 eggs, ½ cup of coconut, 4 tbsp. l. butter, 1/3 cup sugar, juice and zest of 1 lime, a pinch of salt.

Cooking pasta cake

Prepare lime Kurd first. Put butter, sugar, lime zest and juice in a small saucepan, add a pinch of salt. Place the saucepan over medium heat, stir in the ingredients with a whisk, then start adding the egg yolks. Bring the Kurd to a boil and simmer for 10-15 minutes. The lime sauce should be thick enough. Cover the pan with cling film, cool the Kurd.

Now you can start preparing the base for the cake. Combine almond flour with powdered sugar in a food processor. Whisk the egg whites in a medium bowl and add a little sugar to them. Then very gently sift half of the almond mixture to the egg whites, mix thoroughly, then sift the remaining flour. The mixture should be smooth and shiny.

Put the dough in a pastry bag. Take a baking sheet and line it with parchment paper. Squeeze the dough onto the prepared surface, forming the halves of the cakes. Sprinkle the halves with coconut. Place the baking sheet with the cake in the oven, bake the bases for 18-20 minutes at 170 degrees. Chill the finished pasta for 10 minutes. Apply lime curd on one half, cover with the other.
