Corn salad is also called field salad, it differs from other types of salad by its small dark green leaves with a spicy taste and pleasant aroma. We suggest you prepare a warm salad that will cheer you up - after all, a cheerful combination of juicy grapefruit and mango mousse will remind you that summer is just around the corner!
It is necessary
- For two servings:
- - 140 g of scallops;
- - 80 g mango;
- - 75 g of corn salad;
- - 45 g of mango puree;
- - 35 g radicchio salad;
- - 80 ml of cream, 30% fat;
- - 1/4 grapefruit;
- - black pepper, salt.
Instructions
Step 1
First, bring the cream to a boil, cut the mango into small cubes. Add chopped mango and mashed mango to boiling cream. Simmer for 2 minutes, the sauce should become thick. Season with pepper and salt to taste.
Step 2
Peel the lime zest, set aside. Squeeze the juice of 1/4 lime into the sauce, beat with a whisk. It turned out to be a great original sauce for scallops.
Step 3
Place the radicchio leaves around the edges of the plate, and the corn salad in the center.
Step 4
Separate the segments of lime and grapefruit, peel them off.
Step 5
Cut the scallops into large pieces, fry in olive oil until golden brown. Pepper the scallops, add lime zest to them, mix.
Step 6
Put the scallops to the salad, pour the creamy mango sauce over them. Decorate the finished dish with lime and grapefruit slices and serve immediately.
