Beignets are deep-fried choux pastry donuts. They are airy with a ruddy crust.
It is necessary
- - 1 glass of water
- - 100 g butter,
- - ½ cup flour,
- - ½ tsp Sahara,
- - zest of ½ part of lemon,
- - 4 eggs.
- For jam:
- - 400 g of fresh strawberries (can be frozen),
- - 200 g of granulated sugar,
- - 1 tbsp. vinegar.
Instructions
Step 1
Make the jam first. To do this, put sugar and berries in a pan, put on medium heat and cook, stirring occasionally, until the sugar dissolves. Add vinegar and cook, stirring occasionally, for about 8-10 minutes. Then turn off and remove from the stove.
Step 2
Pour water into a saucepan, add salt, sugar and butter, cut into pieces. Place over medium heat and cook until butter melts. Remove from heat and add flour, stirring constantly.
Step 3
Put the pan back on the stove and cook, stirring constantly, until the dough rolls into a ball and a crust forms at the bottom, about 2-3 minutes.
Step 4
Remove the pan from heat, transfer the dough to a bowl. Add eggs in turn, stir until smooth. In the end, the dough should be shiny and smooth.
Step 5
Pour sunflower oil into a deep frying pan and place on the stove. Heat over medium heat.
Step 6
Shape the dough into small balls with your hands. Deep-fry them and fry until tender, about 3-5 minutes each. Finally, transfer the donuts to paper towels to absorb excess fat. Serve with strawberry sauce.
