It is necessary

  • - soft persimmon - 2 pcs;
  • - butter - 100 g;
  • - cane sugar - 200 g;
  • - eggs - 2 pcs;
  • - cognac or brandy - 2 tablespoons;
  • - flour - 300 g;
  • - soda - 1 teaspoon;
  • - baking powder for dough - 1 teaspoon;
  • - nutmeg - 0.5 teaspoon;
  • - walnuts - 1 glass;
  • - raisins - 1 glass;
  • - salt - 0.5 teaspoon.

Instructions

Step 1

Remove the skin from the persimmon with a knife. If these fruits are ripe, then this can be easily done, since the thick rind lends itself easily. Add butter to this mass, which should be melted in advance, and granulated sugar. Stir well until completely homogeneous - the sugar should dissolve.

Step 2

Beat the eggs separately, then add to the puree-like mass of granulated sugar and persimmon. Pour in cognac and brandy and mix well. Sift flour into a deep bowl. Add salt, baking powder, nutmeg and soda to it. Mix these products into a single mass.

Step 3

Add the resulting mixture of flour and nutmeg to the persimmon puree. Stir until the lumps dissolve. You will end up with a thick and very fragrant mass - a dough for future bread.

Step 4

Crush walnuts in a mortar and mix with raisins. Mix well and add the resulting mixture to the main one, that is, to the dough. Mix. So it will be evenly distributed. By the way, instead of raisins, you can use any other dried fruits, for example, prunes.

Step 5

Grease a special bread pan with sunflower oil and place the dough in it. In this form, send to the oven, heated to a temperature of 180 degrees, for about 60 minutes. Soda bread with persimmon is ready!
