Like many salads, "Anthill" has several cooking options, it is made from beef, chicken fillet, ham and even squid. Only the shape of the salad remains unchanged. It is customary to lay it out in a slide, which makes the dish look like an anthill. In addition, the salad is sometimes sprinkled with poppy seeds on top, which mimics small ants.

Anthill salad with beef

To prepare this version of the Anthill salad you will need:

- 700 g of beef;

- 3 heads of onions;

- 2 medium-sized carrots;

- 500 g of fresh mushrooms;

- 4 pickled cucumbers;

- a bunch of green onions;

- 4 eggs;

- 1 tbsp. l. wheat flour;

- vegetable oil;

- mayonnaise;

- salt;

- poppy.

Rinse the beef under running water, place in a saucepan and fill with hot boiled water so that it barely covers the meat. Cover the saucepan with a lid and place over low heat. When the water boils, remove the foam with a slotted spoon and cook the meat until cooked. About 15 minutes before the end of cooking, salt the meat and, if desired, put spices (bay leaf, pepper in a pot) into the broth. Cool the finished beef and twist it through a meat grinder.

Peel onions and carrots, wash, chop finely and fry in a pan in vegetable oil. Chop the pickled cucumbers with a knife. Wipe the mushrooms with a damp towel or wash, cut into slices and fry too. Finely chop the washed and dried green onions.

Mix raw eggs with wheat flour, beat well and bake omelette pancakes from the prepared mixture. Then cut them into noodles or strips.

Despite the simplicity of preparation, the Anthill salad is rather laborious. It will take about 2 hours to complete.

Mix all prepared salad ingredients thoroughly. Season the "Anthill" with mayonnaise and place in a deep salad bowl or on a plate with a slide. Sprinkle the salad with poppy seeds on top.

Anthill salad with chicken

To prepare a salad "Anthill" with chicken fillet, you need to take:

- 700 g chicken fillet;

- 3 hard-boiled eggs;

- 1 raw egg;

- 1-2 fresh cucumbers of medium size;

- 1-2 carrots;

- lettuce leaves;

- 200 g cherry tomatoes;

- 1 grapefruit;

- 200 g of soft cheese;

- soy sauce;

- mayonnaise;

- vegetable oil;

- bread crumbs;

- salt;

- spices to taste.

First of all, prepare the chicken. To do this, wash the fillet, dry it, cut it into strips and marinate in soy sauce for 20 minutes. Beat the raw egg well with a whisk. Dip the marinated chicken fillet in an egg, then bread in breadcrumbs and fry in vegetable oil until tender.

Peel the grapefruit and cut or break the flesh into small pieces. Then mix the grapefruit with the fried chicken strips and set aside for 15 minutes. During this time, the meat should be soaked in fruit juice.

To prepare the Anthill salad according to this recipe, it is recommended to use feta cheese.

Wash the cherry tomatoes and cut them in half, and the hard-boiled eggs into quarters. Grate soft cheese. Cut fresh cucumbers into thin strips. Wash carrots, peel and grate on a coarse grater.

Combine all prepared salad components, season it with salt, spices, mayonnaise and mix well. Then put in a slide in a salad bowl and serve.
