Minestrone is one of the most common dishes in Italian cuisine. Despite the large list of ingredients included in the soup, the dish is considered light. It takes a minimum of time to prepare a delicious vegetable soup.
It is necessary
- - 200 g rice pendant;
- - 2 handfuls of green beans;
- - 2 handfuls of green peas;
- - 1 onion;
- - 1/3 pod of red sweet pepper;
- - celery stalk;
- - 1 clove of garlic;
- - 50 g parmesan;
- - 3 tbsp. l olive oil;
- - black pepper;
- - 1 carrot;
- - basil leaves;
- - salt.
Instructions
Step 1
Wash and peel the onions, carrots and garlic. Cut onions and carrots into small pieces. Crush a clove of garlic with a knife and chop.
Step 2
Peel the bell peppers and cut into small pieces. Cut the celery into the same slices as the pepper.
Step 3
Wash the rice in warm water. Drain the water several times until it becomes transparent.
Step 4
Take a heavy-walled saucepan and pour 2 tablespoons of olive oil into it. Place all vegetables in a saucepan and cook for about 7 minutes. The vegetables should be soft.
Step 5
Add rice to a saucepan, mix everything and add water. Any broth can be used instead of water.
Step 6
After boiling for 12-15 minutes, add the green peas and green beans to the saucepan. Cook the soup until the rice is done. Season with salt and pepper.
Step 7
Grate the parmesan on a fine grater and sprinkle on the soup, poured into bowls. Tear the basil with your hands and add to each plate. Sprinkle a small amount of olive oil into each serving.
