Baked duck always suggests a celebration. And the chocolate sauce will make it more delicious. Family and friends will be delighted with such a treat!
It is necessary
- 1 duck (1, 5 - 2 kg)
- 1 tbsp. l. olive oil
- 1 head of onion
- 3 stalks of celery
- 1 tbsp. l. pine nuts
- 2 carrots
- 3 pcs. carnation
- 1 tbsp. l. raisins
- 2 tbsp. l. flour
- Bay leaf, salt, pepper, parsley, red pepper
- 1 and ¼ h. L. Sahara
- 1, 5 Art. l. confectionery chocolate (unsweetened)
- ¾ Art. white wine vinegar
- 2 tbsp. l. olive oil
Instructions
Step 1
Prepare vegetables: chop onions, celery and carrots.
Step 2
Rinse the duck, cut into 8 pieces, put in a rooster and simmer until tender, periodically pouring fat over it.
Step 3
Meanwhile, fry celery, onions, carrots in olive oil until tender.
Step 4
Add pine nuts, cloves, raisins, bay leaves, flour to vegetables and pour half a glass of vinegar. Continue simmering for 2 minutes.
Step 5
Remove the duck from the roaster, add to the vegetables, pour ¼ cup vinegar, season with salt and pepper and bring to a boil.
Step 6
Reduce heat and simmer for about 30-40 minutes.
Step 7
For the sauce, combine chocolate, sugar and broth left over from stewing duck. Mix well.
Step 8
Serve the duck with vegetables, pre-season with the sauce and olive oil. Garnish with parsley and red pepper.
