When bubbles begin to appear on the surface of the olives (usually after 2-3 minutes), turn them over with a metal spatula. Fry on the other side for a minute. The pancakes should be slightly crispy. Remove to a plate and cover with a clean tea towel to keep them warm while you cook the rest of the pancakes.

Sprinkle with powdered sugar and serve with butter, jam or honey.
