Zucchini is widely used in dietary and medical nutrition, as they are easily and quickly absorbed by the body, promote better assimilation of protein foods. They are recommended for use in inflammatory processes in the intestines.
To prepare zucchini we need:
- 1 kg. zucchini,
- 400 gr. red tomatoes or 100 gr. tomato paste
- 4 large onions,
- 1 pod of small hot red pepper (can be dried),
- 2-3 pods of fresh sweet red pepper,
- 1 teaspoon ground red pepper
- 1 teaspoon sugar
- salt,
- 1/2 cup soy or sunflower oil
- Zucchini cooking method:
- We take the young zucchini, wash them, cut off the peel from them, cut them lengthwise, take out the seeds and the fibrous middle and rub the cleaned halves on a coarse grater. Peel the onion and finely chop it. Wash red pepper, peel and finely chop. My tomatoes, scald with boiling water, remove the skin and finely chop.
- We take a wide saucepan, pour the vegetable oil into it, heat it up and put the chopped onion there, fry it lightly without browning, add the grated zucchini, finely chopped red pepper, as well as all the seasonings and simmer for about 30 minutes. Stew tomatoes separately, grind and combine with zucchini. Simmer for another 10 minutes.
- Vegetables prepared in this way can be served as a salad, along with dumplings or rice. Bon Appetit!
