Ingredients:

  • Large onions - 1 pc;
  • Radish - 2 pcs;
  • Apple (it is better to take sour) - 1 pc;
  • Arugula salad - 100 g;
  • Long-grain rice - 4 tablespoons;
  • Dry white wine - 1 tbsp;
  • Salt and pepper to taste;
  • Sugar - 1 tsp;
  • Mayonnaise for salad dressing - 2 tbsp. l.;
  • Quail eggs - 8 pcs.

Preparation:

  1. The first step is to wash the radish and dry it, cut off the leaves and root. After that, you need to cut the radish into very thin, almost transparent circles.
  2. Next, wash the apple and, cutting it in half, remove the core. Then cut the halves of the apples into two more pieces and chop them into thin slices.
  3. Peel the large onion and cut it in half. Then chop the halves of the onions into half rings. The half rings should be thin.
  4. Wash arugula leaves and dry thoroughly with a kitchen napkin. Cut the leaves into strips.
  5. Mix onion half rings with chopped arugula leaves. Pour white wine into the mixture and sprinkle with salt, sugar and pepper. Stir the mixture and close it with a plastic bag, or better, if available, with cling film. Let the onion-salad mixture stand for 10 minutes. The ingredients must be soaked in the wine.
  6. Then you need to boil the rice and cool it. Pour rice and chopped apples and radishes into a mixture of onions and lettuce, which will have time to soak in wine.
  7. Season the salad with two tablespoons of mayonnaise and mix gently. Put the finished dish in a salad bowl.
  8. Boil quail eggs (hard boiled). Peel them, then cut them in half. Decorate the prepared salad with halved eggs.

The salad can be served in portioned bowls, in which case you need to lay out all the prepared ingredients in layers, decorate with chopped quail eggs on top and put a couple of drops of mayonnaise.
