The onion pie with the original name "tart flambé" is nothing more than savory pastries with onions, smoked meats and cream filling. This dish comes from Alsace, where peasant families in ancient times baked a pie in ordinary hot ovens. Among the heated coals, a thin cake was laid, the filling and poured over with sour cream or white curd cheese. The onion pie was quickly browned and eaten while still hot.

- • Wheat flour - 300 gr
- • Dry yeast - 1.5 tsp.
- • Table salt - 1/2 tsp.
- • Granulated sugar - 1 tsp.
- • Water (warm) 250-280 ml
- Filling:
- • Onions - 2 pcs.
- • Smoked pork belly - 60 - 80 gr
- • Sour cream - 300-400 gr
- • Vegetable oil - 1 tbsp.
- • Salt to taste
- • Ground pepper (black, pink, white or allspice) - 0.5 tsp.
- • Grated nutmeg - on the tip of a knife
- • Dry herbs (dill, oregano) pinch
Instructions
Step 1
"Tart flambé" is prepared on a simple yeast dough. For dough, combine yeast, sugar and 2-3 tablespoons of flour from the total. Warm water is added, but not all, but about 50 ml. Allow the dough to rise for 20-30 minutes, covering the top of the bowl with a clean towel or napkin.
Step 2
Pour salt into the remaining flour, add the dough and add all the water. Knead immediately. The dough is ready when it is moderately tight and gathered into a single elastic ball. Add more flour as needed. The finished dough is allowed to rise in a warm place, without drafts for about 40 minutes.
Step 3
While the dough is rising, prepare the filling and pouring. For the filling, finely chop onions and smoked brisket. Onion and pork are fried in a small amount of vegetable oil until slightly golden brown.
Step 4
While the filling is fried, prepare the filling. To do this, mix sour cream or non-acidic yogurt, spices and herbs. The risen dough is rolled out thinly. Spread the filling on top of the cake, and then lay the filling. Put the onion pie in a hot oven, about 200-220 degrees, for 15-20 minutes until browning. Onion tart flambé is eaten hot, along with dry white wine or beer.
