You can, of course, run to the store and buy something for tea … But if you are a lover of homemade pastries, then it is quite possible to have time to make a cake if you will have guests only in an hour! I usually make this cake in 40 minutes. This is not some pre-made biscuit product, but a real "Pancho" that will have to be baked and collected. I will share with you my little secrets that will allow you to cook it just as quickly.

It is necessary

  • - large eggs 5 pcs.
  • - flour 1 glass
  • - sugar 1 glass
  • - cocoa 3-4 tbsp. spoons
  • - fresh or frozen cherries / cherries
  • - sour cream from 15% 0.5 l
  • - sugar 3-4 tbsp. spoons
  • - dark chocolate 1 bar (100 g)
  • - milk 50 ml

Turn on the oven, let it heat up, while you prepare the dough for the chocolate biscuit. I always make a classic chocolate sponge cake. It never fails, it turns out delicious and lush. Take eggs, separate the whites from the yolks. Beat the whites with a mixer until fluffy, so that they increase in volume by 4-5 times. Continue whisking, gradually adding sugar. When the mixture is firm, add the yolks one at a time, mixing thoroughly each time. The mixer can be removed; you will no longer need it. Sift flour and cocoa, add them to the dough and gently stir in with a wooden spatula.

Cover the baking sheet with parchment and brush with vegetable oil. Pour the dough into it and place in an oven preheated to 180 degrees. Bake the biscuit for 15, maximum 20 minutes (depending on the oven and on the thickness of the layer), then remove and cool it. It will cool down quickly, because it turns out to be thin, like a roll.

While your biscuit is in the oven, prepare the cream, filling and icing. For cream, mix sour cream with three to four tablespoons of sugar. See for taste. You can mix with a spoon, you do not need to use a mixer for this, because for this cake we need a pretty liquid cream. For the glaze, heat the milk over low heat, melt the chocolate in it, stirring constantly. When the mixture is smooth, remove from heat to cool.

Prepare the berries. If you have fresh berries, peel them. If you are using a freezer, then it must first be defrosted. Sweet cherry itself is sweet and does not need additional processing. But the cherries should be boiled for literally 5 minutes with a few tablespoons of sugar (to taste).

When the sponge cake has cooled down, take a plate slightly smaller in diameter than the one on which you will collect the cake. Cut out the bottom cake along it, as if using a stencil.

Tear the remaining cuttings into small pieces of arbitrary shape.
