The delicacy, familiar to many from childhood, can please more than one generation of children. Simple candies made from sugar are such a delicacy. Their shape can be very different, but lollipops in the form of cockerels look the most familiar.

The main advantage of these sweets is that they do not contain any preservatives or dyes. You can easily prepare this natural dessert yourself.

Classically cockerels

The recipe for classic cockerel chocolates contains the following ingredients:

- sugar;

- water;

- lemon juice.

Sugar and water must be taken in equal proportions. The volumes will depend on the amount of candy you want to make. For a standard metal mold for 6 candies, 9 tablespoons of these ingredients will be enough.

It is better to take lemon juice fresh, instead of it you can use citric acid diluted in water or a little vinegar, but the taste of sweets will not be as soft and pleasant as with lemon juice. You can adjust the amount of lemon juice yourself to taste.

For sweet candies of lemon juice, 1 tablespoon will be enough, if you want a more pronounced sourness - increase the volume of lemon juice and add less sugar.

Mix water with sugar in an enamel bowl and put on low heat. Bring the ingredients to a simmer, stirring constantly. Add lemon juice to the sweet water and continue stirring. The water will gradually begin to boil away and change its color. The whole mixture, in the end, should boil down to a syrupy state.

To test the syrup for doneness, place a bowl of cold water. Drop syrup into it, if the drop grasps and becomes strong, remove the container from the heat, if not, cook on.

To make the candies easy to get out of the mold after they are ready, brush it with a little vegetable oil. Pour the syrup into molds. When the syrup begins to set a little, insert wooden sticks into the molds.

You can get special candy sticks, ice cream sticks, toothpicks or wooden skewers for barbecue.

After the syrup has completely solidified, open the molds and remove the candies from them.

Colored candy cockerels

The recipe for colored cockerels is a little simpler in terms of cooking technology than the classic homemade caramel. At the same time, they can look much more original. To prepare them, you will need to prepare regular candies of different colors.

Remove the wrappers from the candy canes. Divide the candies into groups by color. Melt the first pile of sweets in a water bath.

Be sure to grease the molds with oil. Pour the first layer of caramel into them, filling only a third of the molds. Leave the molds in a cool place and wait for the caramel mass to thicken.

In the same way, melt the remaining groups of candies one by one and pour them into the mold in layers. Insert a wooden stick into the last layer of caramel after it starts to set.

Remove the lollipops from the mold after the caramel has cooled completely. They will be multi-colored.

Colored cockerels made of juice and sugar

Delicious and colored candies are easy to make from natural juice. The list of ingredients is as follows:

- natural juice;

- sugar;

- lemon juice.

To get juice, take any fruits and berries. Pass them through a juicer and strain through a sieve to remove all the pulp.

Take juice and sugar in equal amounts, 9 tablespoons each. Heat them in a bowl over low heat, and after dissolving the sugar, add a tablespoon of lemon juice.

Pour the finished mass, brought on fire to a thick caramel state, into greased molds and insert wooden sticks. After the caramel has set, the candies are ready.
