The salad, called Harbin, is common throughout the Heilongjiang province in China. Harbin is the central city of this province. The salad is easy to prepare, and therefore you can easily make it yourself.
Main ingredients
Khabrinsky salad cannot be prepared without two main components: funchose and soy sauce. Funchoza - glass starch noodles. It is common not only in China, but in other Asian cuisines. Today it is available everywhere, but you need to pay attention to its composition: the noodles should be made from beans or potatoes. Noodles made from cornstarch are considered substandard and not edible.
Soy sauce is also very important in this dish. In salad, it is used as a dressing. It should be noted that a quality sauce is made from soy beans with the addition of wheat grains. Often, the prepared sauce also contains salt. It is better to give preference to a product without added sugar and flavorings.
Another important ingredient is woody mushrooms. They are also known in China as mu er. On sale, they are found in dried compressed form. You can use any other dried mushrooms in the recipe.
Tofu is a product made from soybeans. Leafy tofu can be found, perhaps, only in China. It can be substituted for soy asparagus. Another alternative is to fry a single egg omelet, chill it, roll it up and slice it thinly.
For a salad for 4 servings you will need:
- funchose (glass noodles) - 500 g;
- woody mushrooms (dried) - 150 g;
- leafy tofu (or soy asparagus) - 200 g;
- egg - 1 pc.;
- cucumber - 2 pcs.;
- carrots - 1 pc.;
- white cabbage - 300 g;
- chicken breast - 300 g;
- soy sauce - 2-3 tbsp. spoons;
- sesame oil - 2 tbsp. spoons;
- red capsicum - 1 pc.;
- sesame seeds - 1 tbsp. spoon (for decoration);
- brown sugar - 1 teaspoon;
- lemon juice - 0.5 teaspoon.
Cooking method
Pour a glass of boiling water over the mushrooms. After 5 minutes, they will swell and increase in volume. Bring water to a boil in a large saucepan. Dip the noodles there. Depending on the number of servings - half or a whole package. After five minutes, drain the water, add soy sauce and sesame oil.
Then finely chop the vegetables: one large or two medium cucumbers, chop half a small head of cabbage. Instead of the usual white one, you can use the Peking one. Optionally, you can add one carrot, grated in large strips. Mix vegetables with noodles and tofu.
Cut the chicken breast into thin strips. Pour vegetable oil, preferably sesame oil, into a deep frying pan. Bring it to a boil. Add some red capsicum. Fry the chicken until golden brown. Remove hot pepper. Add one tablespoon of soy sauce to the skillet. Place the meat or chicken on top of the mixture of vegetables, noodles and tofu. Decorate the finished salad with sesame seeds. Add a little lemon juice and brown sugar to taste. Chill the salad for 30-60 minutes and serve.
