Croutons are a common name for various types of toasted bread. They are hot snacks. Hot herring with croutons can be cooked not only for a holiday, but also every day as an addition to lunch or dinner.

- 2 pcs. salted herring;
- 1 liter of milk;
- 4 eggs;
- 1 tbsp. l mustard;
- 2 tbsp vegetable oil;
- 1 loaf of white bread;
- 1 lemon;
- parsley and dill.
Instructions
Step 1
First, rinse the salted herring several times under cold running water. After that, put it in a small saucepan, cover with milk at room temperature and soak in it for thirty to forty-five minutes. After the time has passed, remove the fish from the milk, dry it slightly with paper towels or a towel.
Step 2
Then take a sharp knife and cut the fish into clean fillets, carefully remove the skin, remove the vertebral column and all small bones, cut into small pieces. Be sure to save milk and caviar.
Step 3
Boil eggs hard-boiled, cool in cold water and peel. Separate the yolks and chop them with a fork. After that, rub thoroughly in a small plate with mustard, gradually add vegetable oil, as well as chopped milk and caviar, mix everything.

Then cut the loaf into even slices no more than 2.5 centimeters thick. Fry them on both sides over low heat in a little vegetable oil until slightly golden brown.

Next, transfer the fried loaf slices to a paper towel lined plate and leave to cool down.
Step 6
After the bread has cooled, immediately smear it evenly with a mixture of yolks and mustard, put on top of the bread two to three slices of herring, half a slice of lemon without skin and grains, put in a preheated oven for three to four minutes.
Step 7
Serve hot herring with croutons on the table, pre-decorate hot snacks with sprigs of dill or parsley. Bon Appetit!
