  • - sugar - 150 g;
  • - salt - a pinch;
  • - baking powder for dough - 11 g;
  • - eggs - 2 pcs.;
  • - egg yolks - 4 pcs.;
  • - starch - 2 tablespoons;
  • - vanillin - 0.5 teaspoon;
  • - milk - 200 ml;
  • - cottage cheese - 400 g;
  • - zest of one lemon;
  • - cinnamon - 0.5 teaspoon;
  • - candied fruits - a handful.

Instructions

Step 1

So, combine wheat flour with baking powder, that is, baking powder for dough, and salt. Sift this mixture several times into a sufficiently deep bowl. Then add 100 grams of granulated sugar, vanillin and 140 grams of butter there. The oil must always be cold. Having turned the resulting mass into crumbs, add raw chicken eggs into it, and then knead a homogeneous and rather soft dough to the touch.

Step 2

Cut the dough into 2 pieces and roll each into a ball. Wrap the dough in plastic or cling film and put it in the refrigerator for a while.

Step 3

Mix 50 grams of granulated sugar with two egg yolks. Pound this mixture thoroughly, then add starch to it along with two tablespoons of wheat flour. Then add milk to the resulting mass, certainly hot. Remember to stir the mixture while doing this.

Step 4

After adding the hot milk, let the mixture stand for a minute, then add the remaining butter to it. Heat this mass over low heat for 3-5 minutes. Once off the stove, combine with grated lemon zest, cottage cheese, and leftover egg yolks, ground cinnamon, and chopped candied fruits. Mix everything properly. The filling for the Pastera pie is ready!

Step 5

Remove the dough from the refrigerator compartment and roll one part of it to fit the baking dish. Also, do not forget to form low sides for the cake.

Step 6

After placing the filling in a baking dish, cover it with equal-sized strips cut from the second part of the dough. Lay the strips so that they are intertwined. Bake the cake like this at 170 degrees for 60 minutes.

Step 7

Once the baked goods have cooled completely, place them in the refrigerator for at least 12 hours. Pastera pie is ready!
