It is easy to prepare cranberry cakes, but the result will be impressive - an excellent combination of biscuit and cream with cranberry sourness. In addition, small cakes are very convenient to serve at the table - either in dessert plates, or you can pack them in parchment rosettes.
It is necessary
- For four servings:
- - 1 egg;
- - 50 g of cranberries;
- - 4 tbsp. tablespoons of sugar;
- - 2, 5 st. tablespoons of butter, wheat flour;
- - baking powder, cognac, salt.
Instructions
Step 1
Preheat the oven to 200 degrees.
Step 2
Separate the egg yolk from the white. Whisk the yolk and half the sugar, add baking powder, salt. Pour in cognac to taste, you should get a homogeneous mass.

Add flour, stir. Combine the mass with the whipped protein, knead the dough.
Step 4
Place the dough on a baking sheet lined with baking paper and put in the oven for 15 minutes.
Step 5
Let the biscuit cake cool down, then cut it into 2 layers.
Step 6
Mash the butter with a fork. Rinse the cranberries, pat dry. Mix berries with butter and half sugar. It turned out to be a cream.
Step 7
Spread the layers with half of the cream, put on top of each other, cover the top layer with the cream too. Put the biscuit in the refrigerator for 2 hours. After that, cut into rectangular cakes, serve with tea.
