This Vietnamese beef soup is also called pho-bo. It turns out to be very satisfying, because it is prepared from meat in meat broth. Mint, lemon and chili pepper add a unique flavor to the first dish that instantly spreads throughout the house, bringing the family together for a delicious lunch or dinner.
It is necessary
- For four servings:
- - 400 g of beef;
- - 300 g of rice noodles;
- - 90 g legumes;
- - 1 red chili, 1 lemon, 1 white onion, 1 anise (star anise), 1 cinnamon stick;
- - 1.5 liters of beef broth;
- - green onions, mint leaves, fish sauce, white pepper.
Instructions
Step 1
Put a piece of meat in a plastic bag, put it in the freezer for 40 minutes.
Step 2
Place the onion, star anise, cinnamon, pepper in a large saucepan, add a couple tablespoons of fish sauce (you can buy it in Japanese stores or replace it with oyster sauce), pour in the broth and 500 ml of water. Bring to a boil, reduce heat, cover, simmer for 20 minutes.
Step 3
Remove the onion, star anise, cinnamon stick. Add rice noodles to ordinary boiling water, stir, drain. Rinse the noodles with cold water. Remove the meat from the freezer, cut very thinly across the fibers.
Step 4
Divide the meat and chopped green onions into portioned soup bowls. Arrange the meat, mint, sprouts, sliced white onions, and chopped chili for flavor. Pour hot broth into bowls with a ladle, serve with lemon wedges. Typically, this soup is served with Chinese chopsticks.
