Tapenade is a thick sauce made with chopped olives, anchovies and capers. Having prepared puff ears on the basis of this spread, you will get an excellent appetizer for white wine or beer.

    • 125 g tapenade, 4 dried tomato halves
    • 2-3 sprigs of fresh thyme
    • 200 g butter or margarine
    • 2 cups of flour
    • ½ glass of water
    • 1 tsp Sahara
    • ¼ tsp salt

Instructions

Step 1

Sift flour onto a work surface and place slices of butter or margarine on top of it. Chop the flour and butter with a knife. Dissolve sugar and salt in cold water, stir well. Add water to the chopped flour and knead the dough. Cover the dough with a damp cloth and refrigerate for 2-3 hours, then roll it out several times, folding each time in 3-4 layers. Send the puff pastry back to the refrigerator while you prepare the filling for the puff ears. If you do not want to waste time making puff pastry, you can buy ready-made in the store.

Step 2

Chop tapenade, thyme and dried tomatoes in a blender. As a result, you should get a homogeneous paste. You can cook tapenade yourself. To do this, you will need a jar of pitted black olives, a jar of anchovies, 1 tbsp. capers, 1-2 cloves of garlic and salt, pepper to taste. All this is finely chopped in a food processor with the addition of 1 tbsp. dark rum and 150 ml of olive oil.

Step 3

Roll out the puff pastry into a 0.6 cm thick rectangle. Spread the cooked tapenade and tomato paste over it.

Step 4

Roll the puff pastry into a roll on both sides towards the middle. Moisten the joint with water and press well, otherwise the halves will fall apart during the cooking process. Wrap the roll in plastic wrap and refrigerate for 30-40 minutes.

Step 5

Remove the chilled roll and cut into slices 10-12 mm thick. If you do not have a sharp, thin knife, then the dough is easy to cut using thick silk thread or wire.

Step 6

Arrange the puff tapenade ears in a baking dish so that they do not touch each other. To prevent the dough from sticking to the mold, the bottom can be sprinkled with flour or greased. Place the baking sheet in the freezer for about 10 minutes. As a result, the ears will be more accurate when baking.

Step 7

Preheat oven to 220 degrees and bake puff ears with tapenade for about 10 minutes until golden brown. It is advisable to serve the dish as a warm snack, so calculate the right cooking time.
