In Spanish cuisine, vermicelli can be found in many dishes. Soups and broths are cooked with it, meat and fish dishes are prepared. Vermicelli is especially appreciated in the cold season, since the dishes with it are very satisfying and instantly warming.
It is necessary
- Ingredients for 2 persons:
- - 200 gr. pork;
- - young onion;
- - 2 cloves of garlic;
- - 1 tomato;
- - half a glass of white wine;
- - 200 gr. thick vermicelli;
- - 4-5 almond kernels;
- - 2-3 strands of saffron (optional);
- - 1 teaspoon of chopped parsley (fresh or dry);
- - salt pepper;
- - a glass of broth or water;
- - olive oil.
Instructions
Step 1
Cut the pork into medium-sized cubes. If there is fat, it needs to be cut. Heat a little olive oil in a bowl with thick walls and fry the meat for 5 minutes, so that it is slightly browned.
Step 2
Chop the onion and one clove of garlic, send to the pan. Fry over medium heat for 5 minutes, stirring occasionally.
Step 3
Peel the tomato and grate it. Add to the pan, mix all the ingredients, fry for 5 minutes. Pour in the wine, increase the heat, let the alcohol evaporate. Pour in the broth (water), reduce the heat, simmer the meat for 15 minutes.
Step 4
Pour noodles to the meat, add a little water if necessary. Grind almonds, garlic, parsley and saffron in a mortar, add the aromatic mixture to the meat with noodles. Simmer the meat, stirring occasionally, until the noodles are cooked. At the very end, salt and pepper. Garnish with parsley before serving (you can use dry seasoning).
