Borscht, according to many, is one of the most beloved first courses. And this is absolutely deserved. After all, red, rich, thick borscht is not only incredibly tasty, but also healthy and beautiful. Each housewife has her own borscht recipe. As a rule, it is quite simple. This soup can be made very quickly if you have everything you need at hand.

Step 1
You can cook delicious borscht from either beef or pork or chicken. Which meat to choose is up to you. Cut the meat into small pieces, rinse and cover with water (1-1.5 liters) in a saucepan. Put it on fire and cook, skimming, for 20 minutes after boiling.
Step 2
The recipe for quick borscht assumes that the hostess has jars with preparations for borscht. Typically, this is a vegetable mix made from beets, carrots, onions, peppers and tomatoes. If you do not have such preparations, then you need to prepare the vegetables, but it will also not take much time.
Peel the beets and grate on a coarse grater. Do the same with carrots. Chop the onion finely enough. Chop the garlic. Cut the bell pepper into strips. Put vegetables in a preheated pan and fry for 5 minutes. At the very end, add tomato paste and a pinch of salt to the frying.
Step 3
Peel the potatoes and cut into cubes. Chop the cabbage into strips. Transfer the vegetables to the meat pan and cook over medium heat for about 10 minutes more.
Step 4
Also send the finished vegetable frying to the pan. Add salt, pepper and spices to taste and simmer over medium heat for about 10 minutes. Then remove the pan from the heat. A delicious rich borscht according to a quick recipe is ready. Serve with fresh herbs and sour cream.
