This unusual pie with lemon filling is made from shortcrust pastry. You will have to tinker with such a dessert, but it turns out to be truly festive.
It is necessary
- For the cake:
- - 2 cups of flour;
- - 200 g margarine;
- - 1 egg yolk;
- - 3 tbsp. spoons of cold water;
- - 1/4 teaspoon of salt.
- For filling:
- - 1 cup of sugar;
- - 2 lemons;
- - 3 tbsp. spoons of starch;
- - 2 tbsp. tablespoons of butter;
- - 2 tbsp. tablespoons of flour;
- - 1, 5 glasses of water;
- - 4 egg yolks;
- - 1/4 teaspoon of salt.
- For the meringue:
- - 4 egg whites;
- - 6 tbsp. tablespoons of sugar.
Instructions
Step 1
First, prepare the shortbread chopped dough. Chop the flour and margarine, add the egg yolk, salt and a couple tablespoons of ice water, and put the dough into a bowl. Put it in a mold, distribute it with your hands along the bottom, forming small sides. Put in the oven for 15 minutes, cook at 180 degrees, the cake should be slightly browned.
Step 2
Prepare the lemon filling. Whisk 1 cup sugar with flour, starch, salt in a saucepan. Pour in water, add zest and lemon juice. Bring the mixture to a boil, stirring it with a whisk. There should be no lumps left! Add butter.
Step 3
Whisk in the egg yolks, add some hot lemon syrup, continue whisking. Add the resulting mixture to a saucepan, bring to a boil, stirring constantly. Cook for a few minutes, until the mixture thickens. Then you can remove the pot from the stove. Cool the filling slightly, pour over the base for the pie.
Step 4
Whisk the whites into a foam, add sugar in small portions, beat until the mixture becomes firm. Place the meringue on top of the lemon filling.
Step 5
Bake American Lemon Pie at 180 degrees for 15 minutes. The meringue on top should brown.
