Chicken rolls with chanterelles can be prepared both on a regular day and for a festive table. Cut into slices, they look very appetizing, have a piquant taste and aroma.

It is necessary

    • For option 1 (in the oven):
    • 4 chicken breasts (fillets);
    • 5 boiled yolks;
    • 300 g fresh chanterelles;
    • 2 onions;
    • 75 g butter;
    • 1 liter of chicken broth;
    • 4 tablespoons bread crumbs;
    • parsley
    • dill
    • salt
    • pepper to taste.
    • For the 2nd option (on the stove):
    • 4 chicken breasts (fillets);
    • 100 g fresh chanterelles;
    • 1 onion;
    • 1 head of garlic;
    • fresh herbs
    • salt
    • pepper to taste.

Instructions

Step 1

Peel the chanterelles, rinse and chop finely. Cut the onions into half rings. Heat a skillet with vegetable oil, put mushrooms and onions on it and fry them over medium heat.

Step 2

Remove skillet from heat and cool slightly. Boil the eggs, remove the yolks, mash them with a fork and put them in the mushrooms and onions. Chop the parsley finely and pour into the skillet. Season the mixture with salt and stir, then pass it through a meat grinder.

Step 3

Cover the chicken breasts with cling film or a plastic bag and beat lightly with a hammer. Season them with salt and pepper on both sides.

Step 4

Spread the minced mushroom over the breasts and wrap each roll. Secure the rolls with threads. Dip chicken rolls in breadcrumbs and sauté in butter.

Step 5

Remove the threads and place the rolls in a deep bowl. Prepare one quart of chicken stock. Pour the rolls over them and place in the preheated oven for twenty minutes. After the dish has cooled slightly, cut the rolls across into slices and serve, sprinkling with parsley or dill.

Chicken rolls with chanterelles can be prepared without using the oven. Prepare chicken breasts by beating them off with a hammer. Season with salt and pepper.

Saute the onions and garlic in butter, add the mushrooms and herbs and keep the skillet on medium heat for a little more. Mix everything and place this filling on the chicken breasts.

Roll each breast and wrap tightly with cling film. Place the rolls in boiling chicken broth and cook for ten to fifteen minutes.

Step 9

Remove the finished rolls from the pan, refrigerate and remove the foil. Before serving, cut them into slices, place them on a platter and garnish with herbs.
