Lobio made from beans, pomegranate juice, and cilantro with walnuts is a great nutritious option for fasting. The dish is prepared quickly, only the beans must be soaked in advance, otherwise it will take a long time to cook.

It is necessary

  • - 1 cup of beans;
  • - 0.5 cups of walnuts;
  • - 1 grenade;
  • - 2 onions;
  • - a bunch of cilantro;
  • - 2 tbsp. tablespoons of tomato paste;
  • - salt.

Instructions

Step 1

Rinse the beans, cover them with cold water and leave to soak overnight. Then boil until tender, soaked beans do not cook so long - about 30 minutes.

Step 2

Rinse the bunch of cilantro, shake off excess moisture. If you are not very fond of cilantro, replace it with parsley or dill. Peel the onions, cut into half rings, fry immediately until transparent in a little vegetable oil.

Step 3

Mix the beans with 2 tablespoons of tomato paste, put in a skillet with fried onions. You can add a little of the liquid in which the beans were boiled. Salt to taste, you can add a pinch of suneli hops for aroma.

Step 4

Squeeze the juice out of the fresh pomegranate using any convenient method. It is advisable to strain the pomegranate juice through a fine sieve.

Step 5

Pour pomegranate juice to the beans, add walnuts. Chopping nuts is not required, add whole kernels. Simmer together for about 10 minutes, then add the chopped bunch of cilantro.

Step 6

Serve hot or warm lobio with pomegranate juice. This is a complete dish, it does not need side dishes.
