Take 2 lemons, rinse them thoroughly, and then use a fine grater to wipe the zest off them. Then use a citrus juicer to juice 4 lemons. Combine it with grated zest. Stir the mixture well.

Put the eggs in a separate bowl, beat, then combine with the sugar-lemon mixture. Leave it to infuse for half an hour. Thus, the lemon peel will give its aroma to the future cream.
Step 3
Strain the present lemon mixture through a sieve, then pour into a small saucepan and put on fire. Boil it until it thickens. As soon as this happens, add butter to it. Mix everything thoroughly and cook for another 1-2 minutes. It remains only to cool the resulting mass. Lemon cream is ready! It should be kept in the refrigerator in a tightly sealed container.
