Spicy droplets with pleasant nut-and-carrot notes are perfect for a buffet snack. A gourmet snack can be made from any plastic cheese.

It is necessary

  • For a cheese snack:
  • - 200 g of dried apricots;
  • - 96 g of Mimolet cheese (here Bio-Rueblikaese carrot);
  • - 80 g of Philadelphia cheese (here creamy Almette);
  • For the sauce:
  • - 100 g of sugar;
  • - 300 g of orange juice;
  • For decoration:
  • - 64 g of fried caramelized hazelnuts;

Instructions

Step 1

Make orange sauce. Juice the oranges and combine with sugar. Putting on fire, boil to 160 ml, remove from heat and cool.

Step 2

Prepare caramelized hazelnuts. Cook a light golden caramel with 1 part water and 3 parts sugar and cook until light golden brown. Then cool slightly by immersing the container with caramel in ice water for a few seconds. When the caramel becomes stringy, dip the hazelnut kernels strung on wooden skewers into it.

Step 3

Having fixed skewers with nuts horizontally, for example, by sticking them into a stack of books, and leave the caramel to solidify at room temperature. Remove the nuts from the skewers before serving.

Step 4

For the filling, soak dried apricots in warm water for 2 hours. Cut dried apricots into small cubes 2 * 2 mm in size, combine with curd cheese.

Step 5

Collect the snack. Cut the cheese slices into 3 g rectangles. Fill a pastry syringe with a round tip with the filling and divide the mass into 9 g portions.

Step 6

Wrap the filling with rectangular slices of cheese, giving the shape of a drop. Place cheese drops in a tasting spoon, pour over the sauce and garnish with caramelized hazelnuts.
