It is necessary

  • - 250 g of shortbread cookies;
  • - 100 g of butter;
  • - 30 g of gelatin;
  • - 300 g of cottage cheese;
  • - 1 glass of cream (35%);
  • - 2 tablespoons of sugar;
  • - 1/2 cans of boiled condensed milk;
  • - 1/2 can of canned pineapples;
  • - bitter, white chocolate (to taste);

Instructions

Step 1

Grind the cookies in a blender or pass through a meat grinder. Add softened butter, one tablespoon of boiled condensed milk and mix thoroughly with your hands until a smooth, sticky mass is formed.

Step 2

Put the resulting mass in a mold covered with cling film, distribute evenly over the bottom of the mold and press firmly. Place in the refrigerator for 30-40 minutes. Drain the syrup from the pineapples and grind them in a blender until smooth.

Step 3

Pour gelatin into 1/4 cup of canned pineapple syrup and leave for 20-30 minutes to swell, then completely dissolve in a water bath. Pass the cottage cheese through a sieve and beat with the remaining boiled condensed milk.

Step 4

Whip the cream with sugar, add the curd mass, pineapple puree and pour in the loose gelatin, beat thoroughly with a mixer until a homogeneous cream is formed. Put the cream in a mold, distribute evenly and place in the refrigerator until it hardens completely, for 7-10 hours.

Step 5

Before serving, gently free the cake from the mold, put it on a plate, garnish with pineapple slices, sprinkle with coarsely grated bitter chocolate, decorate with figures of bitter and white chocolate.
