Ingredients:
• 2 tablespoons (40 ml) olive oil
• Juice of half a lime
• 1 small red onion
• 1 clove of garlic
• ¼ chili peppers
• A pinch of salt
• 1 cup cherry tomatoes
• 1 small ear of corn
• 1 red pepper, medium
• 1 avocado
• ½ cup macadamia
• A large handful of fresh coriander (cilantro)
Cooking method:
1. Cut the cherry tomatoes in half, coarsely chop the macadamia and avocado nuts, separate the corn kernels from the cob (this can be done by cutting them with a regular knife).
2. Finely chop the red peppers, onions and chili peppers. Chop a clove of garlic. Chop the greens.
3. Combine all ingredients in a bowl. Add lime juice and olive oil.
4. Season with salt to taste, stir and serve.
Instead of cherry tomatoes, you can use regular tomatoes in this recipe.
Mexicans, however, are used to spicy food. You can adjust the hotness of the dish with the amount of chili peppers and garlic.
