    • 500-700 g of pork ribs;
    • 2-3 bay leaves;
    • black peppercorns;
    • salt.
    • For the sauce:
    • 2 onions;
    • 1 clove of garlic;
    • 4 tbsp. l tomato paste;
    • ½ tsp basil;
    • 1 tsp mustard;
    • 2 tbsp. l honey;
    • 6 tbsp. l meat broth;
    • 6 tbsp. l soy sauce;
    • ½ tsp caraway seeds;
    • Tabasco sauce
    • vegetable oil;
    • salt.
    • For garnish:
    • 1 kg of potatoes;
    • 50 g butter;
    • salt;
    • fresh herbs.

Instructions

Step 1

Rinse the ribs well in cold water and pat dry with a paper towel or towel. Then cut them up so that each portion is meat and bone.

Step 2

Then fold the pork ribs into a large saucepan and cover with cold water. Do not forget to salt, add bay leaves and black peppercorns. Cook them over high heat for an hour and a half, that is, until fully cooked.

While the ribs are cooking, start making the sauce. Peel the onion, chop it finely and fry it in a little vegetable oil. Peel the garlic, chop it, add to the onion and fry it lightly.

Then add tomato paste to the pan, season everything with salt, herbs, honey, broth, soy sauce, mustard and a drop of Tabasco. Bring the sauce to a boil and simmer in an open saucepan for five to seven minutes.

Preheat the oven to 225 ° C. While it is heating, remove the meat from the pan, dry it slightly and place it on the grill. Be sure to place a baking sheet under the wire rack and fry the meat on the middle shelf of the oven for ten to fifteen minutes.
