Instructions

Step 1

For oriental-style pangasius, defrost one fish fillet and cut into portions. Then prepare the marinade. In a bowl, combine one tablespoon of orange juice and the same amount of lemon, 2 tablespoons of soy sauce, and one teaspoon of freshly grated ginger. Salt if necessary.

Step 2

Place the fillet pieces in the marinade bowl and leave to rest for 3 hours. Pour 150 grams of flour into a separate flat dish. Heat 5 tablespoons of vegetable oil in a frying pan and add the fish, which must first be rolled in flour. Fry the fillets over medium heat on both sides until golden brown.

Step 3

Make beer batter pangasius. To do this, divide 700 grams of fillet into portions, salt, sprinkle with pepper and marinate for half an hour in the juice of one lemon. In a separate bowl, beat 3 eggs with 100 grams of dark beer and a pinch of salt. Heat 100 grams of vegetable oil in a frying pan, pour 150 grams of flour on a flat plate. Dip the fillets in the egg and beer mixture, then roll in flour and transfer to the skillet. Fry on both sides over high heat until golden brown. Sprinkle the finished fish with chopped dill.

Step 4

To cook pangasius in a savory breading, defrost and cut 500 grams of fillets into medium pieces, season with salt and pepper. Make the sauce. To do this, mix 130 grams of tomato sauce with 3 grated cloves of garlic, a pinch of salt and one teaspoon of flour. Then mix 2 eggs with 50 grams of water and beat with a whisk. Pour 100 grams of flour on a flat dish.

Step 5

Dip the fillet pieces first in the sauce, then in the flour and egg, and then again in the flour. Place the fish in a preheated skillet with vegetable oil and fry on both sides over medium heat. Serve hot or cold.
