Artichokes are delicious and very healthy. They can be fried, steamed, stewed, boiled. They also go well with other vegetables.
It is necessary
- - 4 large artichokes,
- - 3 medium carrots,
- - 1 large onion,
- - 400 grams of young potatoes,
- - a bunch of green onions,
- - a bunch of dill,
- - juice of 1 lemon,
- - 150 milliliters of olive oil,
- - salt, ground black pepper to taste.
Instructions
Step 1
Remove tough leaves from artichokes. Cut off the hard top and stem. Gently clean the base with a knife. Gently scrape out the hairy inside with a spoon.
Step 2
Rinse the artichoke leaves and submerge in a pot of cold water. Add half the lemon juice to the water.
Step 3
Peel carrots, onions and potatoes. Cut the carrots into half rings, finely chop the onion, cut the potatoes in half. Rinse green onions and dill and chop finely.
Step 4
Pour oil into a heavy-bottomed saucepan and heat it well. Place the onions in a saucepan and fry for about 5 minutes.
Step 5
Add carrots to the onion and simmer for 2-3 minutes. Add the remaining lemon juice and one and a half cups of boiling water. Mix everything and bring to a boil.
Step 6
Shake the artichokes from the water, put them together with the potatoes in a saucepan. Add green onions, salt and pepper.
Step 7
Cover the saucepan with a lid and simmer over low heat for 40 minutes. Sprinkle with dill before serving.
