    • 3-3.5 cups flour
    • 500 ml yogurt
    • 400 ml milk
    • 50 g butter
    • 1 egg
    • ½ teaspoon of baking soda

    • For filling:
    • 500 g cheese
    • 1-2 eggs
    • 50 g butter

Step 1

Prepare the dough. To do this, be sure to sift the flour through a sieve to loosen and saturate with oxygen. The dough for khachapuri has its own characteristics, it is kneaded with the addition of soda on yogurt. Therefore, add yogurt, soda, milk, salt to half the flour and beat well to break up any lumps of flour.

Step 2

Continuing to stir, add flour in small portions until you reach the desired consistency and the dough is smooth and elastic. The dough should not be too tight. Cover the finished dough with cling film and refrigerate for 1 hour.

Step 3

Prepare the filling for the khachapuri. The cheese for the filling is usually taken as chanakh, Imeretian and feta cheese. Such cheeses require preliminary soaking in cold water for 5 days. Mash the prepared cheese with a fork to a paste consistency and mix with raw eggs and butter.

Step 4

Take out the finished dough and roll it into a thin layer. Melt the butter and grease the layer. Roll and roll again, grease with oil and roll again. This procedure will stratify the dough during baking and make the khachapuri even tastier. Divide the dough into 5 portions for five khachapuri.

Step 5

Divide each piece in half and roll out two round tortillas. Place the filling on one tortilla, cover with the second part and pinch the edges. Place the tortilla in a baking dish. Brush with an egg, beaten with butter. Bake khachapuri in an oven preheated to 170 degrees for 30-35 minutes. Serve the khachapuri hot.
